Blueberry Banana Flaxseed Waffles + Dynamic Stretching

Pancakes were on the menu tonight, but I decided to swap for waffles. My pancake flipping skills are really quite sub-par so I have a tendency towards mini meltdowns every time I ruin one. Maybe that’s because I never follow the recipe?

Blueberry Banana Flaxseed Waffles (adapted from Playful Decor)

  • 2 eggs
  • 1 pureed banana
  • 1/4 cup plain nonfat Greek yogurt
  • 1 1/2 cup milk
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 3/4 cup ground flaxseed
  • 1 tsp honey
  • 4 tsp baking powder
  • 1 tsp vanilla
  • 1 cup blueberries
Beat eggs, then add milk and applesauce. Combine all dry ingredients and add to mixture. Add vanilla.

Lastly, add in blueberries. Batter will start rising so don’t worry if it looks too thick. Cook until just golden brown and crisp on the outside. Check before your “ready” light comes on, I pulled all mine off the waffle maker before the light was on.

Note: I ended up adding some extra milk as I went a long. It would’ve been fine, but it made them easier to spread.

I wish I would have made extras to freeze for breakfast this week, but we ate them all. Quickly.

Earlier…

After Kevin’s dismaying display of inflexibility the other day, I decided we need to incorporate some dynamic stretching. I did some research on it today. It’s been a pretty hot buzz thing for runners, but I think the jury is still out on how much of an impact it really has. But it can’t hurt, right?

We tried this Dynamic Stretching routine from Runner’s World.

Kevin and I both feel soooooo out of running shape still. So Kevin wanted to run instead of WOD today. He misses out on running sometimes because I’ll often do it when he’s at work or doing homework. We ran 5.04 miles in 47:39. Nothing to write home about, but we pounded it out – no breaks! I think I was still tired from my “faster” 5k last night, and Kevin was really feeling the sun. We need to make a water plan for next time!

We saw this puppy hanging out at King Sooper’s. I loved him so much. I was petting him and one of the workers came up to us in a frenzy and told me not to call the pound. Like I would call the pound!! Haha. I would just take him home. Lol. Kevin and I both thought that his owner was probably inside. He was obviously well-trained to sit & stay because he wasn’t budging!! But the worker lady was really worried and started looking at his tags. We were about to call the owner when one of the cart boys came up and told us not to worry because the owner was shopping in the store.

We couldn’t help but think… what would Boyd do? He’d go bananas if we left him alone in public!!!

Do you stretch? Before workout? After workout? Mid? We’re not good at this. At all.

Would You Rather Wednesday:Would you rather be a sports superstar for 3 seasons and never play again -OR- be a bench player with a 20 year career? Bench player… At least I’d stay in shape. On the other hand, I could be the 3 season superstar, get fat, and then get on the Biggest Loser. I’d be Bob’s favorite for sure!! And they’d show so many clips of my golden days. It’d be awesome!

Okay. One more. Would you rather date someone who talks too loudly -OR- someone who looks like he/she is constantly staring? Staring!!! I have a staring problem anyways. NBD! Haha.

These questions are fun to ask your husband/boyfriend/friend to see if they can guess what your answer would be. That’s why we got the game anyways! Kevin did really badly guessing my answers in public, and I wanted to coach him!!! Haha. :)
